Many of thesefruits are dried in the open air or in ovens to makethem keep longer. Plantains, also known as cookingbananas, are a speciality in African cuisine. In con-trast to their sweet relatives, these energy-packedfruits with high starch content cannot be eaten raw. Groundnuts (aka peanuts) also play a centralrole as oil, as a tasty accompaniment or as peanutbutter – and are full of vitamins, too.

At the same time, this strip of a country along the continental coast of south-east Asia has its own rather unique cuisine. Although historically strongly influenced by Chinese cooking, the cooking traditions of the Thaiand Khmer as well as French colonial occupiershave left their marks in the country’s cuisine.
